I must admit that I like eating much more than cooking. Still, sometimes I get the right mood to experiment in the kitchen. Unfortunately, it´s not always enough time for creating dishes for hours. Though I prefer sticking to a healthier way of life, I still think that you should allow yourself some delicious treats every now and then. Eating only cooked and fresh vegetables won´t make you any happier. I know that I´m not the only person who is lack of time but still eager to eat proper food. That´s why I decided to share with you my go-to recipes which don´t need too much time but taste amazing. Today, we start with bruschetta with white-bean topping, greens, ham, and mozzarella.
The ingredients we need for two persons:
- Four slices of bread with a thick crust
- of preserved white beans
- A bunch of parsley
- 1 garlic clove
- A package of ham or 8 thin slices for two persons
- 2 balls of Buffalo Mozzarella
- Olive oil
- 2 tablespoons of lemon juice
- Salt and black pepper
Toast or bake four slices of bread in the oven until they are crispy. Open and wash white beans. Then, let them drain. After that, put them into a deep bowl and start squeezing them with a fork. Then, add a little bit of olive oil, lemon juice, roughly chopped parsley, salt, and pepper and press a garlic clove into the bowl. When your topping is ready, just spread it on the bread, adding some rocket leaves, ham and the half of a ball of Buffalo Mozzarella. That´s it! You can enjoy your tasty and fast prepared meal.
Depending on the fact, whether you eat meat or not, you can simply leave the ham out of your bruschetta. It still will be very delicious and full of flavor. I love such kind of food. It´s very easy and fast to make and still, it´s much better than eating some random bread.
