Finally I could take some pictures for the “nutrition” category. Obviously I had been too hungry all the time I cooked something. This time I did it! I wanted to begin with something very easy, quick and healthy. I like using my multi-cooker for cooking. You can cook, fry, bake, simmer and much more with it. Additionally it goes really fast, easy and does not take up much space in the kitchen. If you haven’t such gadget you can cook on the pan.
For this healthy lunch we need a chicken breast, tomatoes, cucumbers, dry chanterelles, croutons, parsley, olive and sesame oil and soya sauce.
I like using nutmeg, black pepper and garlic salt for seasoning. The best thing about garlic salt is that it makes every dish much tastier and you won´t have that garlic scent in your mouth.
First of all take the chanterelles and put them in hot water (80 C°) for 10-15 minutes.
Then take chicken breast and cut it in little pieces. After that put them in multi-cooker or on a pan. Salt and pepper chicken according to your taste. When the chicken pieces are half fried pour a little bit of water and add two tablespoons of soya sauce to them. Let it simmer for 7 minutes.
For the salad cut tomatoes and cucumbers and chop parsley. Give it all into a bowl. Then add two tablespoons of sesame oil, salt and pepper.
I love tomatoes and cucumbers and try to eat them as often as I can. Why?! That´s easy. Both vegetables have almost no calories because they mostly consist of water. There are also so many vitamins and minerals in them. Tomatoes contain vitamins A, B1, B2, C, E, folic acid, biotin, alpha and beta carotene, potassium and much more. Latest tests also proved that tomatoes also help against cancer cells. Cucumbers also contain group B vitamins, magnesium, calcium, iron and much more. As you see, these vegetables are worth eating.
When chicken is ready give croutons in the salad and enjoy your tasty and healthy lunch.
