I haven´t made any foodies or cooked for my blog for a while. Still, healthy, and balanced food is of great meaning to me. I believe that healthy food can be easy to cook and still, be very delicious. That´s why I will try to make such posts regularly. I am a huge fan of easy recipes which don´t need too much time or too many skills. Often, I don´t have enough time for complicated stuff, but even though, I don´t want to choose junk food. Today´s recipe is very simple so that you don´t need to be a chef. So, if you like poultry and avocados, you will like it.
Fried chicken breast with avocado cream and rungs
We need the following ingredients: two-three chicken breast filets, one ripe avocado, rungs, tomatoes, garlic, olive oil, one lemon, salt, and pepper.
This is how you make the avocado cream:
Cut the avocado into two pieces and put all the fruit pulp out with a spoon. Then give it into a bowl and crush it until it turns into a cream with a fork. Wash tomatoes and cut them into tiny cubes. After that, give them to the cream. You can take both normal sized tomatoes or the cherry ones. I personally prefer cherry-tomatoes because they are much more practical for cooking. If you like garlic, you can take one or two cloves and cut them into the tiniest cubes you can. After that, crush them with the side of the knife and put them to the avocado cream with tomatoes. Then, add two tablespoons of olive oil, lemon juice, a little bit of salt and pepper, and mix it all together. The avocado cream is ready.
Next step is cooking the chicken breast. First of all, you need to cut the chicken breast alongside, so that the pieces are thin and long. Pepper and salt them. Give a little bit of oil into the pan and fry them until they get a golden crust. Don´t forget to wash the rungs and let them drain.
When the chicken breast pieces are ready, put them on the plate and spread a big amount of the avocado cream on them. Put the rungs on the cream as the upper layer. Additionally, you can take some onion rings and salad leaves and create more layers. Though, my favorite way to eat this kind of chicken is just like I mentioned first.
As you can see, the chicken breast with avocado cream and rungs is very simple to cook but tastes so delicious. It´s also a healthy kind of lunch or dinner which will provide you with vitamins and energy for a long time without feeling stuffed.
